October 6At our Junior League meeting on Tuesday, we celebrated the publication of the new cookbook. The chef at the country club was kind enough to prepare our dinner using recipes from the cookbook. This is the Pear and Romaine Salad with Citrus Mustard Dressing. It was phenomenally good!

Is that cheese? Intriguing!

Yes, that’s shredded Swiss cheese in the center. The salad also has dried cranberries, cashews, pears and apples. I’m not normally a fan of cashews, but they provided just the right amount of crunch and flavor to round out the fruits and the tang of the dressing. Email me if you’d like the recipe (don’t want to violate copyright by posting it!)
